But..

When I try to speed up a flight (under 30 secs) It says there is a plane in the hanger, however - there isn't any. I basically can't hurry the process. Is there something I am doing wrong?

One thing I just discovered is that gifts of pax10 will also go to the top bar next to your fuel bar if your inventory is below 100. It's not just fuel that has this trick.
