I have deleted most of the building since I now only need the flowers from using the pruning shears, question is, is there any benefit from keeping the others, any opinions out there?

unless you really-really-really need the space, I recommend keeping (at least the ones you can not readily buy back).
Completing the Dolce Vita collection was another benefit of these buildings (it provides decent number of coins/experience).
