There is a table on the aiporty city wiki, but doesnt include new buildings. If not its a paper and pen , or excel, job.

I use excel.
There are several factors I consider, such as maximum (theoretical) harvest rate, the approximate harvest rate I can get from "heavy" and "casual" play respectively.

I also consider the cost of the building (initial coins and population count) vs the benefits (coins and possible drops)

You will find that the optimum mix change over time, based on your style of play and level and priorities in the game.
