PS : I've read on the forum that some of you guys have millions in coins, especially level 50s. It seems unreachable and I'm wondering if you buy coins of if it is easier and faster to collect them as you reach higher levels ?

I now have a stitcher. Not sure what I'm suppose to do with it yet, but I'm sure it'll come in handy later down the road.

Never buy coins from GI! If you want to spend real money (I never did), buy greenies, but never coins.
Land will be in greenies for you very soon, with land you can buy more buildings, buildings give you coins in the beginning. Later launches will give you coins....
