It's the never ending discussion about "Do I trust my users to play around with the system or do I protect them from themselves since I know everything better than they do?" I prefer OSs that allow me to tweak them where I find it useful for my purposes. But betting a first child?

I thought very hard about that! Apple are so anal about ANYTHING being accessible in that way, without jail breaking the device a change like that is almost unheard of. It's also why the majority of Apple users like the stuff. They think Apple is stable rather than knowing they're so limited on what they can change, the system seems more stable because the user can't f#%£ it up!! (well, let's say a lot less able than on other systems!)
