UPDATE ON MARCH 22, 2016

Here is an up-to-date guide to all current destinations that require maps, including Alliance destinations.
This Excel spreadsheet (compressed so I could upload it) includes the name of the collection, the reward building, destination, items needed and the type of plane required.
There are spaces for you to keep track of the stars you have earned and the maps you have received through Excavation flights.
If you find any mistakes, please let me know!

Thank you, greensmith. I was just about to ask. There are so many flights and destinations including hidden ones that I wonder if I am missing something. I think it was already year 2 of Airport City when I started playing so I am pretty sure there were quest flights that I missed.

If you have time and if you don't mind, can you also have a list of ALL destinations and flights including quest flights? I know there were flights that are only active during quests, like Riviera for Valentines and those Area 54 maps. If you would, I'd really appreciate it.

Unfortunately, I did not keep track of the non-collection quest flights. I will do so in the future and add them to this list.
If anyone has this information on quest flights, please let me know!

I thought some of these required flight items as well. It's a great list I will probably use.

There are 2 Wiki, there you will find such information.
The first is in english, the second in german language.
In the german Wiki all destinations, collections, buildings and almost all items are available.

Do we purchase maps ever time we have to fly?
dt_318, you can best buy them in dukes store for coins. If you buy them when you want to fly, you have to pay greenies...
The first flights to get chests are 1 flight 1 map.
The flights to get items are 1 map, as many flights you can start in the time the map is active (at least 6 hours)

@fip123 : I have to fly to Tollan, Chichen Itza, Technochitlan and Quetzalcoatl Temple to complete the Aztec Legacy collection. Flying to all these destinations requires maps which are only availble through the Airship store for 12 Airport Cash. It seems ridiculous to spend that much amount of airport cash just to get 3 random maps. Is there anny other way?

The best way to get maps to those destinations is to buy the Excavations: Mesoamerica maps from the Airship store for, I believe, 1000 coins each. You can buy a max of ten for each Airship visit. These maps enable you to fly to the Excavations: Mesoamerica destination. The flight will drop (seldom) a Map Chest: Mesoamerica. In that chest will be a random map to either Machu Picchu, Tollan, Chichen Itza, Technochitlan and Quetzalcoatl Temple.
You can buy Machu Picchu, Tollan, Chichen Itza, Technochitlan and Quetzalcoatl Temple maps for greenies, but you don't have to.

Don't spend the coins, because it is hard to get..... And suddenly, you have millions coins and nothing to buy..... Don't spend greenies because greenies are hard to get..... Suddenly, you have thousand hundreds greenies and nothing to buy...... Is seems hard to get something. But in the end, they are useless.... The point is read your play field, and plan what you do.... If you don't know your play field and spend all around, you need to change strategy.

I do spend the coins for maps so I get chests with maps so I get items so I get golden tokens so....
I hope to buy a bank, casino or mint to get greenies so I can buy more land for my Iphone game without spending real cash..... So if you have a goal, spend the coins :)
But I agree, find your goal in the game (can be different for each game if you have several) and find out what you need to reach that goal.

Bali, I guess, you were right and wrong. Right about token were useless, and wrong about spent them all. The idea for me is spend half or spend all but immediately regain. Anyway, since there are pages106-108 in collections, for sure the offers will comeback. And you know your play field now. Better setting up. I have now more than 500 golden in my hand. So, come Casino......
